A celebration of seasonal flavors and a tribute to tradition, made with quality, locally sourced ingredients.
Traditional Madrid stew with Pedrosillano chickpeas, collard greens and cabbage with potatoes and turned carrots from Jaral de la Mira.
Smoked Iberian black pudding and chorizo from Asturias, veal pelota and Iberian secret with Guadarrama veal shank, Iberian pork bacon, hen and bone.
Accompanied by spring onions and piparras peppers from Navarra
Includes water, glass of wine or beer, and coffee.
