Stew

A celebration of seasonal flavors and a tribute to tradition, made with quality, locally sourced ingredients.

Traditional Madrid stew with Pedrosillano chickpeas, collard greens and cabbage with potatoes and turned carrots from Jaral de la Mira.

Smoked Iberian black pudding and sausages from Asturias, veal meatball and Iberian pork with beef shank from Guadarrama, Iberian pork bacon, hen, and bone.
Served with spring onion and Navarra piparras
Includes water, a glass of wine or beer, and coffee.

Torrija flambéed with Grand Marnier and cookie ice cream

reinterpreted with a contemporary perspective and made with seasonal products of the highest quality, under the direction of Chef Mario Sandoval.

The Lovers’ Menu is a gastronomic proposal designed to be shared,
where each dish accompanies the moment and leaves room for conversation.
The selection of seasonal products combines delicate and balanced flavors, with careful preparations
that respect tradition and reinterpret it with subtlety.
In an environment full of history, the Lovers’ Menu offers the ideal setting to celebrate
and toast to the present.

Seasonal cuisine finds its maximum expression in the Game and Mushroom Menu, a proposal created by Mario Sandoval that pays tribute to the forest, the land, and the deepest flavors of autumn. Each dish is a sensory journey where game and mushrooms are interpreted with technique, respect for the product, and a contemporary perspective, keeping the essence of tradition alive.
