The addition of Mario Sandoval to the team as Executive Chef. With 2 Michelin Stars, 3 Repsol Suns, and the 2013 Gastronomy Award, Mario applies the “values of Coque’s cuisine” both in the restaurant and in all of the hotel’s catering services.
Recognized for his scientific approach to the product, Mario has left his mark on Haroma, reflecting his passion for the finest raw materials. He recovers traditional flavors with the most avant-garde techniques, respecting and enhancing the flavor of each ingredient in all dishes on the menu. Thus, he offers healthy, attractive, and haute cuisine menus.
